Besides the printed menu, Dave produces many specials that show up from local farmers at the back door. “At 3:00 I can’t tell you what the 6 specials will be, but at 5:00 they will be ready.” For example, Grass fed Abbeville veal short ribs al a blanquette, Duck fat poached salmon with crispy skin salad, Pan fried flounder with lobster creamed corn and preserved lemon tartar sauce or Pig tail and white bean soup with homemade lardo.
